I got this idea from a post on Facebook. Someone out in the blogging world (I can’t remember who) came up with this idea, but I changed the recipe to make it a tad healthier.
It is super easy (or I wouldn’t do it) and takes about 10 or so min.
Get you a good, non-stick skillet hot and spray it lightly with coconut oil. This is the kind I use:
Place banana slices in the skillet and drizzle with a little honey. Give the skillet a little shimmy to get the banana slices coated with the honey and then brown on both sides. Be careful, the banana can get a little mushy and you will smash them if you don’t flip gently, I actually used a butter knife and my finger. After you flip the slices, shimmy the skillet again. I know there is probably a more technical term for shimmy-ing the skillet, but I don’t know it and you get the idea.
After the banana slices are brown on both sides, place them on a plate and dust with cinnamon. Put the entire plate in the freezer for about 10 minutes to cool and harden them (hardest step).
These are a super yummy breakfast addition or afternoon snack. Aaron put his in a bowl of ice cream, which totally ruined the healthy changes I made, but it looked really good. The boys also love them!
If you count every calorie: A normal size banana is around 100 calories and a tablespoon of honey has 60, so I would place this at about 175 calories to be on the safe side. It literally tastes like candy, so it is a great sweet-tooth satisfier!
I don’t know if you can freeze them, but I guess you could. I should try that next time, but the boys eat all of them before I can freeze them…
