My Perfect Summer Salad

I am a huge raw veggie lover and with garden harvest time approaching quickly, here is a quick, yummy way to use some of your produce.

Light Summer Salad

Combine all of this in a huge bowl:
Lettuce (I use the bagged spring mix, cause I am not very good at growing my own)
Sliced Cucumber, Mushrooms, Roma Tomatoes, and Yellow Squash
Chopped Purple Onion
1 Tablespoon of Chia Seeds

I am a vinegar and oil kind of girl, but just about any dressing will taste lovely with this mix.  Also, I have been known to throw whatever I may have in the fridge in the bowl too: jalapenos, carrots, broccoli, cauliflower, green olives.  Get creative, it all tastes good!  This salad is good on its own for lunch, but it perfect paired with grilled tuna or salmon for dinner.

I have always let the boys help in the garden and they love eating the raw veggies we grow.  With my close supervision, Evan is just getting big enough to help with the cutting up process and John David uses the vegetable peeler.  It takes more time with their help and sometimes things are not as pretty, but they eat their raw veggies like champs because they “cooked” them on their own.
